Mango Flaxseed Chocochip Muffin

I tried doing another variation of the flaxseed muffin. I substituted with 3/4 cup of mango puree instead of using one big orange juiced. The muffin turned out moist and a little sweeter than previously. It was a big hit with the adult family members.

This time I decorated the muffin with white buttercream and placed one set with big jelly beans and another set with chocolate butterflies.

Orange Flaxseed Chocochip Muffins

Sometime ago I bought a packet of flaxseed meal on impulse after hearing from a forum about the healthy properties flaxseed has on cancer causing agents in our body system. You can read all about flaxseeds from HERE .

I managed to bake this after adapting the recipe from the flaxseed site. It's a healthy recipe and yummy too.

As the recipe uses brown sugar, I decorated a batch of the mini muffins with buttercream and jelly beans for those with a sweet tooth.

With another lot of the muffins, I used dark chocolate moulded with a piping bag for decoration.

Here's sharing the recipe ....

Dry Ingredients:

1 cup quaker oats
3/4 cup plain flour
1/2 cup flaxseed meal
1 tsp baking powder
1/2 tsp baking soda
1/2 cup brown sugar
1/2 cup citrus peel
1/2 cup chocochips


Wet Ingredients:


1 big orange, juiced and zested
1/2 cup evaporated milk
1/4 cup sunflower oil
1 egg, beaten


Method:


In a large bowl, mix all the dry ingredients together.


Pour in the wet ingredients and blend everything well together.


Fill paper lined mini muffin tin till almost to the top.


Bake in a pre-heated oven at 180 degree C for 20 minutes or till wooden skewer comes out clean.


Cool in the tin for 5 minutes before transferring to cooling rack.


(Recipe makes about 30 mini muffins)

Milk Cocoa Creamcheese Cake

I managed to bake this today. The verdict was that the boys liked it.
I am puzzled by the way the pattern of the cake and cheese turned out. It's supposed to have the cheese in the middle sandwiched by the two chocolate layer but somehow by the time the cake was baked, the cheese layer sank to the bottom.

I used an 8" square pan; lined the bottom with greaseproof paper to bake this.

Ingredients and Method :

(A)
250 gm Cream cheese, softened.
60 gm sugar
1 no. egg
1 tbsp Irish Bailey's

Beat the cream cheese with sugar till light and fluffy.
Add in the egg and blend it well.
Put mixture aside.

(B)
180 gm butter, softened.
150 gm sugar
3 nos. eggs
1/4 cup milk
1 tbsp Irish Bailey's

Sieve together ...... 1 tbsp Hershey's cocoa powder,
120 gm cake flour
1 tsp baking powder

Pre-heat oven at 170 degree C.

Beat butter and sugar till light and fluffy.

Add in eggs, one at a time and also the Irish Bailey's till well mixed.

Add in the milk.

Fold in the flour mixture till well blended.

Pour half of (B) into the 8 " pan and then followed by all the (A) and then pour in the rest of (B) again.

Bake for 45 mins. or till wooden skewer comes out clean.

You can serve the cake chilled or eat it warm.

Would like to wish one and all a Happy Easter. :-)

Easter is not just a one day affair cos' we celebrate it till Pentecost comes ... which is fifty days after Easter. Gosh .... it's definitely a long, long celebration ... at least for those Christians of those days .... a long time ago.

This year's Easter Celebration was spent with the extended family at St. Anne's Church.
A simple celebration with lunch bought from the church canteen and the children enjoying each other's company, participating in the games organised by the church community.
I didn't cook anything to share at all cos' of my poor old back. Somehow during the course of the week, I overworked it and was inactivated for almost a week. I can't stand or sit too long cos' the nagging pain will be there. The only comfort and relieve I get was when I lie down sideways with a pillow between my legs.

Now ... after resting for about a week, the poor old back is getting a little better but still .....I have to go slow and rest it as much as possible.
I'm sure the pain I experienced during this Easter season can't be compared with what the Lord went through during His crucifixion.

Chocochip Cream Cheese Muffin

I got the recipe for this muffin from yochana's blog. I did it a little different .... I exposed the cream cheese instead of embedding it into the muffin batter. As a result the muffin looked a little different from the usual. The majority in the family gave it the thumbs up.
