Orange Flaxseed Chocochip Muffins

Sometime ago I bought a packet of flaxseed meal on impulse after hearing from a forum about the healthy properties flaxseed has on cancer causing agents in our body system. You can read all about flaxseeds from HERE .

I managed to bake this after adapting the recipe from the flaxseed site. It's a healthy recipe and yummy too.

As the recipe uses brown sugar, I decorated a batch of the mini muffins with buttercream and jelly beans for those with a sweet tooth.

With another lot of the muffins, I used dark chocolate moulded with a piping bag for decoration.

Here's sharing the recipe ....

Dry Ingredients:

1 cup quaker oats
3/4 cup plain flour
1/2 cup flaxseed meal
1 tsp baking powder
1/2 tsp baking soda
1/2 cup brown sugar
1/2 cup citrus peel
1/2 cup chocochips


Wet Ingredients:


1 big orange, juiced and zested
1/2 cup evaporated milk
1/4 cup sunflower oil
1 egg, beaten


Method:


In a large bowl, mix all the dry ingredients together.


Pour in the wet ingredients and blend everything well together.


Fill paper lined mini muffin tin till almost to the top.


Bake in a pre-heated oven at 180 degree C for 20 minutes or till wooden skewer comes out clean.


Cool in the tin for 5 minutes before transferring to cooling rack.
