Rolled Oats Cookies
Cornflakes Cookies
Here's how I did mine .....
Ingredients:
180 g plain flour
1 tsp baking powder
1/2 tsp baking soda
125 ml sunflower oil
90 g caster sugar
1 beaten egg
1 tsp vanilla essence
1 cup cornflakes or rolled oats
a couple of tbsp of milk to bind the ingredients if you still find it dry.
Method:
Sift flour, baking powder and soda together.
Mix in the sugar, cornflakes or rolled oats till well mixed.
Add in the oil, essence, beaten egg and milk and stir till a dough is formed.
Use a cookie scoop or spoon to form balls and place them on cookie trays.
Bake in a pre-heated oven of 180 degree C for 15 mins. or till cookie turns a golden brown.
Remove and cool on wire rack completely.
Store in air-tight container.

Is rolled oats the same as old fashion/traditional oats? I just bought two tins with the intention to make cookies. TIA!

Hi little corner of mine
I understand that traditional oats have a coarser texture and take a longer time to cook. Rolled oats on the other hand are softer and take a shorter time to cook.
If you are using the traditional oats I believe your cookies will have a coarser texture and a chewy bite.:-)

Hi esther ong
So sorry to hear that your cookies turned out cakelike for the chocochips. I need to know which recipe you used before I can try to determine what when wrong. If you can post in the chocochip section and let me know what substitution you did, maybe we can get a more crunchy cookie out.
Some of the cookies tend to have a soft texture and it's not crunchy.
Hi chawanmushi...

HI Chawanmushi
I baked the cookies following this recipe, except that i used 75g of chocolate chips and omitted the oats or cornflakes. The cookies turned out crisp after removing from oven; but as they cool down, they lose their crispness and the texture became cake-like. Do you face the same problem? By the way, i cool the cookies for about 5 min in pan before removing to cool completely on the wire rack. The cookies were still warm and crisp when i remove them from the pan.
Thanks in advance for your advice (and patience in reading this long entry....)

Hi calla
This particular cookie depends on the rolled oats/cornflakes to give it that unique chewy texture. This cookie does not have the crunchy nor crisp type of texture.
If you like chocochips in your cookie perhaps you would like to use the chocochip cookie recipe I have in my blog.
Hi Chawanmushi
Thanks for your reply. I will take a look at your chocochip cookie recipe. If you have any recommendations for a crunchy or crispy chocolate chip cookie, please email me at calla.valley@gmail.com. Thanks!
