Chocochip Cookies Encore

Another batch of chocochips cookies done. This time the texture is the crunchy and chewy type. Here's sharing with you how I adapted the recipe.

Ingredients:

125 gm unsalted butter, softened
1 tbsp Irish Cream Bailey
3 tbsp brown sugar

1/2 cup condensed milk
1 tbsp cocoa powder
1 cup chocochips
2 cups self-raising flour (300 g)
2 tbsp evaporated milk
1/4 tsp salt

Method:

Cream butter and sugar and salt till well combined.

Add in the condensed milk, Bailey's and cocoa powder and mix well.

Fold in the flour and the chocochips and add in the 2 tbsp milk.

Scoop out teaspoons of the cookie dough and place on a lined baking sheet.

Decorate the top of the dough with M&M baking bits.

Bake in a pre-heated oven of 170 degree C for 10 mins.

Cool cookies completely before storing them in air-tight containers.

Recipe makes 70 pieces of cookies.

I bought mine from the duty free shop at the airport. I believe you can also get it from any wine shop.

Is there a substitute beside using Irish Cream Bailey? Don't think it's 'halal' ingredient that can be consumed by muslim.

In that case, for this recipe you may use 1 tsp of vanilla essence.

hi again,

for this recipe is it possible to substitute plain flour for the self raising flour? then do i have to add in the bicarbonate of soda? and i tried a few supermarket i cant seem to find the measuring cups so i went phoon huat to get the measuring for example the condensed milk is it like 100ml? cos i jus bought my oven and will be trying them this friday...help will be appreciated thanks!

hi elis
You may use plain flour. Add 1 tsp of baking powder or bicarbonate soda into the plain flour and sieve. You may use 100 mls. of condensed milk too.

i have tried the cookies it came out pretty well but after keeping for a day it taste a bit soft is it suppose to be like tat?
n do you have any recipe for cruchy cookies?

hi elis
This cookie recipe comes out soft if you bake them for 10 mins. For a crunchy cookie you may want to bake them a little longer ... maybe 15-20 mins. Do adjust the timing and see how you like the crunchiness.
