Mooncakes October 2006

This is the year that I have been totally crazy about mooncakes. I never bought a single one cos I baked them and made them all by myself. I learned the hard way, experimenting on my own after buying the ingredients and reading loads of information about making mooncakes on the net and baking blogs and websites. I also attended demo classes at Phoon Huat and it is here that I discovered how the filling was moulded into the skin. Once this was mastered, the rest was easy....the moulding and the knocking.
